Early in the spring, the sap starts running in the sugar bush across the ravine from our gardens.
It's a great time to be out in the woods as we watch spring come along day by day.
Using gravity, we siphon the sap from across the gully to our wood burning sugar stove. Using a hydrometer, we carefully evaporate the sap to the perfect density for maple syrup. Lastly, we filter three times for the highest quality finished syrup for you to enjoy!
